I'm going to share with you my recipe for bacon cheeseburgers with sweet potato chips. This dish is sure to please any bacon cheeseburger lover, and the sweet potato chips add a delicious twist! Bacon cheeseburgers are one of my favourite comfort foods. They are easy to make and can be customised to your liking. Instructions

  • Preheat oven to 450°. Drizzle rimmed baking sheet with olive oil and place in oven for 5 minutes. In a mixing bowl, mix potatoes with 2 tablespoons olive oil and season with salt and pepper. Arrange potatoes in a even layer on heated baking sheet. Bake 23 to 25 minutes, then season with salt immediately.
  • Place 2 paper towels on a microwave-safe plate. Spread out bacon in an even layer and cover with 2 more paper towels. Microwave on high for 3 to 3 1/2 minutes.
  • In a large cast iron skillet over high heat, add remaining tablespoon oil. Place burgers in pan and cook 2 minutes per side, then add cheese and cover until melty. Transfer to a paper towel-lined plate to rest.
  • Assemble burger on sesame bun with lettuce, tomato, and onion. Serve with ketchup and a side of sweet potato chips
